Erbazzone

The Erbazzone (Scarpazzone in dialect) is a pot pie prepared with simple and “poor” ingredients, created to make herbs more tasty. The dialectal name derives from the custom of the peasant families to prepare this dish using the white stem of the bieta, called “scarpa”.

It is composed of a base of thin dough, filled with a mixture of boiled beets, eggs, shallots, onion, garlic and Parmigiano Reggiano.

It is then closed with another layer of pasta sprinkled with oil or pork lard and baked in the oven.
