Formaggio Vacche Rosse

The cattle of the Vacca Rossa breed have been present in the area since ancient times.

The breed was in risk of extinction in the eighties but, thanks to the sudden intervention of some skilled breeders, there was a constant growth in the number of cattles: today there are about 3000 specimens.

These special cattle are fed exclusively with grass, hay and certified cereals; the milk that is obtained thanks to these treatments and procedures is of the highest quality and has excellent nutritional properties.

The Parmigiano Reggiano Vacche Rosse can be tasted in many ways: alone, accompanied with balsamic vinegar and jams or inserted in traditional dishes.
