Tortelli Verdi (or Tortelli d’Erbetta) are a first course with very ancient origins.

They are tortelli of egg puff pastry filled with spinach and / or green chard, parmesan and ricotta.

They are boiled in water for a few minutes and then seasoned with butter and Parmesan.
